Tortilla Soup

When I decided to finally kick sugar from my diet, spice became my new favorite flavor. This is the perfect cozy, spicy fall soup. I especially love this soup when I have a cold.

Ingredients:

drizzle of olive oil

1 large onion

1/2 cup sliced, pickled jalepeno peppers (add more or less for spice)

1 1/2 teaspoons minced garlic

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon salt

1 (32 oz carton) chicken stock/broth - no sugar or soy or more if needed

about 1-1.5 pound chicken breast

1 - 15 oz can of corn, drained

1 - 15 oz can of crushed tomatoes (my husband does not like tomatoes so I omit these)

1 - 15 oz can of rinsed and drained black beans

Toppings: (optional)

tortilla chips

avocados

fresh chopped cilantro

lime

Directions:

  1. Add main ingredients to crock pot.

  2. Cook in a crock pot for 5 to 6 hours on low.

  3. Shred the chicken and add back to the soup.

  4. Serve with toppings and a squeeze of a lime juice.
