Chicken and Dumpling Soup
This is a great nutrient dense soup especially when you are sick. I am convinced it is the best medicine for a cold. A great easy meal for a cold fall or winter day.

Ingredients: (Serves 4-6)
Soup
1 1/2 pounds of chicken breast
1 onion diced
2 tablespoons olive oil
1 bay leaves
5 carrots peeled and chopped
3 ribs celery chopped
salt and pepper to taste
dried parsley
1-2 - 30 oz cartons of chicken stock (no sweetener or soy added)
Dumplings
2 3/4 cups flour
2 large eggs
1 cup chicken broth
2 teaspoons baking powder
1 tablespoon parsley
1/2 teaspoon salt
Directions:
Add all ingredients to a large pot over high heat or a crock pot on high.
Stove top: Bring to a boil, then turn down pot to a simmer. Continue to simmer with lid on for an hour or until chicken is shredable.
Crock pot: Set crock pot to high for 3 to 4 hours or low for 6 to 8 hours.
When chicken easily falls apart, add to a separate bowl and shed. Then add back to the soup.
Start making dumplings:
Add dry ingredients to a separate bowl and mix until combined.
Add eggs and chicken broth and mix until thick and sticky.
drop spoonfuls of batter into the soup.
Cover and simmer for 20 minutes.
Serve and enjoy!
