Peanut Butter Cookies
This cookie recipe is a perfect replacement for classic sugary peanut butter cookies. These always satisfy my endless cookie craving and are a perfect snack throughout the day. This cookies can be made with a small amount of sweeter or none at all and still be very satisfying. I find nuts are really helpful to curb sugar cravings and also help flatten glucose spikes. These are also a great fat snack to get in your healthy fats for the day.

Ingredients: (Makes 12)
1/2 cup peanut butter (the only ingredients should be peanuts and salt)
1/2 cup olive oil
dash of honey (optional)
1 large egg
1 1/4 cup flour
3/4 teaspoons baking soda
1/2 teaspoon baking powder
Directions:
Pre-heat oven to 350ºF.
Mix together peanut butter, olive oil, and honey (optional) ingredients in one bowl with a mixer until creamy.
Mix in egg until combined.
In a separate bowl mix together dry ingredients until combined.
Add dry ingredients to the wet ingredients and mix until combined to form a dough.
Add tablespoon amounts of dough to a greased cookie sheet. Then push down with a fork in one direction and then the opposite to form the classic peanut butter cookie pattern.
Bake for 8-12 minutes.
Note: As these cookies are not made with hydrogenated oil, they fall apart more easily. I love to store these stacked on a plate, covered with tin foil. As soon as they are cool, I will add the plate to the freezer. I pull a couple out when I want them for a snack. They are really good cold, no need to heat up and they will stay together better when cold.
