Pumpkin Muffins/Cookies
This nutrient dense recipe leaves you feeling fuller longer and satisfies your cookie craving. This is a great healthy snack that pairs really well with peanut butter. It's also the perfect fall recipe without unnecessary sugar.

Ingredients: (Makes 8-10)
1 cup oats
1 cup flour
1/3 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground cardamom
1/2 teaspoon salt
1/2 cup pumpkin puree
1/4 cup olive oil
1 large egg
1 teaspoon vanilla
add a little honey if desired
1/2 cup pepita seeds or any type of nuts
Directions:
Pre-heat oven to 350ºF and grease a cookie sheet.
In a large mixing bowl, mix together dry ingredients in one bowl until fully combined.
In a separate bowl, mix together all wet ingredients.
Add dry ingredients to the bowl of wet ingredients and mix until combined. Then add and mix in nuts or pepitas.
Spoon batter onto cookie sheet like you would with cookies or add to muffin wells of a muffin pan.
Bake for 11-13 minutes.
Note: I double the batch and then when the cookies/muffins are cooled completely, I will add them to a plastic bag and put in the freezer. I will take out 2-3 at a time and thaw in the microwave for 1 minutes when I want a snack.
