Tortilla Recipe

These homemade tortillas taste better than any tortillas you can buy in the store. When you have the time these are a fun project to make. I usually make a large batch that I can eat throughout the week.

Ingredients:
2 cups masa harina (King Arthur Flour makes a great one - but possibly discontinued)
1 1/2 to 1 2/3 cups hot water
3/4 teaspoons salt
Directions:
Note: This recipe is easiest to make if you have a tortilla press and an electric mixer with a dough mixing attachment but you can make them just find without either.
Whisk together masa harina and salt until combined.
While mixing with mixer or wooden spoon, gradually add hot water and stir until dough begins to form.
Knead the dough or mix with the mixer and dough hook until the dough forms a ball. The dough should not feel to dry and cracking or too wet and sticky. The texture should be similar to play-doh. Add more water or flour as needed.
Cover the bowl with a damp dish towel and let the dough rest for 10 minutes.
Roll small balls of about 2 tablespoons of dough each.
Press a small ball of dough between two pieces of plastic wrap or tortilla press to form the tortilla.
Heat a non-stick skillet on medium-high heat. Allow the pan to heat thoroughly.
Place the tortilla shaped dough on the heated pan and allow to cook 40-60 seconds per side. Repeat with the remaining dough.
Place the fully cooked tortillas on a plate under a damn towel to keep them from drying out as you cook them.
Enjoy the tortillas with any type of taco fillings or carne asada.
