Steak Subs

These steak subs are a healthy alternative to steak and cheese subs. The roasted peppers, onions and mushrooms add a delicious depth to these sandwiches. They are an easy busy night dinner and a hit with my kids (sans veggies)

Ingredients:
extra virgin olive oil
1-2 cup fresh mushrooms
1 large yellow onion
1-2 bell peppers
1 pound fresh shaved steak
salt and pepper to taste

Directions:
1. Heat a medium sized skillet on medium/medium-high heat until pan is thoroughly preheated.
2. Chop onion and peppers as desired.
3. Add enough olive oil to grease the bottom of the skillet. When oil is heated, add shaved steak to the skillet and cook until crispy. Add salt and pepper to taste.
4. Add peppers and onions to a heated skillet with olive oil. Season with salt and cook until browned and onions are translucent.
5. Set peppers and onions aside and add mushrooms to the heated pan with olive oil.
6. Cook mushrooms until golden brown and add salt while cooking.
7. Assemble steak, onions, peppers, and mushrooms in a sub roll and enjoy!
Notes:
I try to use a wheat sub roll if I can or make my own sub rolls for a better quality bread. Most store bought breads are full of sugar and other junk ingredients. I recommend using quality shaved steak, i.e., low in fat, grass fed and organic.
