Classic Pancakes

1 min read

These pancakes are cake like, very fluffy and taste just as good as your classic pancakes but cut out the sugar. These are great for breakfast or even a snack. I usually eat these plain with a side of eggs or top with peanut butter. If I am having a sugar craving I add a little drizzle a small amount of honey or real maple syrup. This recipe is also really simple and easy to make. Usually I make these pancakes plain but on occasion when I go blueberry picking in the summer, I will add blueberries to the batter. These pancakes are delicious with blueberries. If I add blueberries I usually leave out the honey/syrup.

Ingredients: (Makes 6-8 pancakes)

1 egg

4 tablespoons of olive oil

3/4 cups of almond milk

1/2 cup white flour

1/2 cup wheat flour

2 teaspoons baking powder

1/2 teaspoon salt

Directions:

  1. Pre heat a frying pan on medium heat with olive oil.

  2. Mix wet ingredients together in one bowl until combined.

  3. Mix dry ingredients in a separate bowl until combined.

  4. Add dry ingredients to the wet ingredients and whisk until combined.

  5. Use a 1/4 cup measurer to measure out scoops of batter onto the warm, olive oil greased skillet.

  6. Wait until you see bubbles on the top of pancakes before flipping. Set aside when cooked through.
