Chicken Stir Fry

This recipe is a healthy, phytoestrogen free alternative to Chinese food and Hibachi with the same great taste. Instead of soy sauce, this recipe uses coconut aminos. Coconut aminos is a sauce that is very similar to soy sauce and mimics the flavor without the estrogenic effect. Its a quick easy meal that can be made in a large frying pan or a flat top grill. We love using our flat top grill for this recipe. It makes the process much quicker. Tip: make the rice the day. The rice will be less sticky if cooled in the fridge beforehand.

Ingredients:

1 cups of uncooked rice (Choose any rice of your choice. I usually use brown rice as a healthier choice.)

1 bell pepper

1 medium sized onion

1-2 eggs

coconut aminos

salt, pepper, and crushed red pepper flakes to taste

1 lb chicken breast

minced garlic

olive oil

Note: Add any additional veggies of your choice. Bean sprouts, mushrooms, broccoli, baby corn and Asain water chestnuts can also be really delicious in this recipe. Frozen Asain veggie mixes can be found at the grocery store in a prepackaged mix that makes it easy to throw in and cook on busy nights.

Directions:

  1. Preheat skillet or flat top grill on medium/high.

  2. Dice veggies and set aside.

  3. Cube chicken and set aside.

  4. Add and heat 1 tablespoons or so of olive oil in the skillet or grill.

  5. Add chicken and cook until browned and cooked through, then set aside.

  6. Add veggies to the skillet and saute until browned.

  7. Add minced garlic and cook until browned, then set aside or to the side in the grill or pan.

  8. Add an egg or two to the skillet. Make sure you have enough oil. Scramble immediately in the pan with your spatula. Cook scrambled eggs until cooked through and chop thoroughly in to small pieces.

  9. Add chicken, veggies, and rice back to the pan.

  10. Add salt and peppers to the pan and as much oil as desired and to prevent rice from sticking.

  11. Continue to mix toghether and cook until heated thorougly.

  12. When stir fry seems almost ready, add as much coconut aminos as desired, stir until combined and continue to cook for another 3 or so minutes. I find coconut aminos to be more potent than soy sauce so I warn you that a little goes a long way.

  13. Remove from heat, serve and enjoy!

I also like to drizzle a little bit of coconut aminos on my stir fry while eating it, especially as leftovers the next day.
